Bruschetta is one of the simplest and easiest ways to show off good ingredients. It also has the advantage of being a dish that can be conjured in under five minutes

Ingredients
1. 200g cherry tomatoes
2. Handful of Basil
3. 1/4 a (red) onion
4. a shot or two of Balsamic Vinegar
5. Olive Oil
6. Rustic Continental Loaf of White Bread
7. One Clove of Garlic
8. Parmesan Cheese
9. San Danielle Parma ham (optional but nice)
First cut yourself a few chunky slices of bread and throw into the toaster. The race is now on..... You should be able to prepare the rest of the ingredients by the time the toast is cooked.

Now finely dice the onion and half the cherry tomatoes and mix in a bowl with olive oil and a healthy dash of balsamic vinegar. Then rip up some Basil and add to the mix. At this point have a quick taste and season. There are those that add a bit of sugar at this stage to remove the tartness of the vinegar, I would argue against this, but add a tiny dash of honey if you must

Once that your toast is ready, rub the dry toast down with garlic, and place your tomato mix on top of the toast. Now is the time to sprinkle some parmesan cheese over the top, (and the Parma Ham if you have it). Serve IMMEDIATELY
