Cod steak with beer sauce from Francois

Cod steaks have a delicate and juicy texture when roasted. The bitterness of the beer sauce constrasts nicely with the sweetness of the fish.

Price: £8.64 for two medium steaks weighting 432g in total (£20.0/kg on 2/03/10).

Add cold butter to the simmered chopped onions

Chop the onion and cook it slowly with a little butter and water in a covered saucepan. Reduce to a "jam".

Reduce the beer

Reduce the beer. 1dl should be more than enough if the beer is quite bitter.

Add the evaporated beer to the onion jam. Heat and add 100g or more of cold butter which will form an emulsion with the jam and be your sauce. Reserve.

Cook the spinach

Take off the large stems, clean and wash the spinach. Cook in a pan with a little butter. The spinach will reduce. 250g for two is enough.

Peel the baby potatoes

Peel the potatoes and cook in a steam cooker or a pressure cooker (10 minutes). 300g is OK for two. Reserve.

Cook in 270ºC oven

Pan-fry the steaks in a little oil and butter until golden (on both sides). Place on a dish and put in a hot oven for 7 minutes. Take out of the oven and let cool for 15 minutes under an aluminum foil. Then put in a plate and take off the skin and the bone.

Presentation

Presentation: steak in the middle, spinach on one side and boiled potatoes on the other. Sauce.
