Spaghetti alla vongole is one of my favourite Italian recipes. Is is essentially clams with spaghetti, yet it is a brilliant dish as all the tastes come together.
We start with collecting some chives from the garden, which we will use as at the last moment before serving.

In the meantime, start preparing the spaghetti and get it cooking in boiling water. Then we chop some garlic, and start frying it in a saucepan.

Gently soften the garlic then add a glass or two of white wine and then the clams.

Put a lid on the pan and steam the clams until they all open up - this will only take a few minutes. Then quickly add the clams to the spaghetti, add the chives and serve.
