Aubergine Parmigiana from pauline

This is an extremely scrumptious veggie dish.

You will need aubergines, tomatoes, mozerella, shallots, garlic, and parmesan

Preheat the oven to 200 degrees celcius.

Slice the aubergine, salth both sides and lay on kitchen roll
Add a weight and leave for 30 minutes (this removes the bitter taste). Rinse and pat dry.
Slice the tomatoes
Chop the shallots and garlic
Heat some olive oil in a pan. Fry half of the garlic and shallots till golden. Fry the tomatoes

Place a layer of aubergine in a baking dish, followed by a layer of tomatoes
Add a layer of chopped mozerella
Add grated parmesan, then keep layering all ingredients finishing with a layer of mozerella. Grate lots of parmesan on the top
Bake for 30 minutes
