Aubergine stew from pauline

I have recently decided to eat more healthily and so you will be seeing more vegan recipes, starting with this aubergine stew which is extremely tasty and makes you feel like you're on holiday in Italy.

You will need rice, aubergine, vine tomatoes, olives, capers, parsley, red onion, garlic and dried oregano
Chop the aubergine into big chunks
Chop the red onion and garlic
Finely chop the parsley
Soak one spoonful of capers in water
Soak a handful of olives in water
Chop the tomatoes
Heat some olive oil in a pan. Add a teaspoon of dried oregano.
Fry the aubergine for about 5 minutes until golden
Add the onion, garlic and parsley. Stir.
Add the drained olives and capers. Drizzle over some vinegar.
Add the tomatoes and simmer for 15 minutes.

In the meantime cook the rice.

It is ready when it looks scrumptious!
Serve on rice with a drizzle of olive oil and some salt. Enjoy!
