Pancakes from pauline

With pancake day coming up on Tuesday I thought I'd make pancakes. This recipe makes 6 1/2 pancakes which is enough for 2 people.

You will need 110g flour (I use self-raising as it makes them nice and fluffy), 1/2 pint milk (I prefer semi-skimmed), 2 eggs (large, organic and free range - happy hens make tasty eggs!). I am making my pancakes with ham, fried egg and cheddar cheese but anything will do. For those with sweeter tooths you can have yours with nutella, sugar and lemon juice, icing sugar, icecream, fruit or all of these together! You will also need a coin (all will be revealed later!).

Pancake ingredients

- Put flour into a bowl with a pinch of salt. - Make a well in the centre. - Here comes the tricky part - you will need 1 egg yolk (yellow part) plus 1 whole egg. So, lets try and separate the first egg and if it doesn't work we can still use it and try again with the second egg. Crack the egg and open in two over a small bowl so that the egg white falls into the bowl. Move the yolk from one shell to the other to remove as much egg white as possible. If the yolk cracks or falls - just use this whole egg and maybe you'll be more lucky second time round.

- Put 1 egg and 1 egg yolk into the well of the flour with a little bit of milk.

- With a fork mix this liquid solution and gradually mix the flour in. - As the solution becomes thicker/clumpy add more and more milk whilst mixing.

- Do this until you've added all the milk and all the flour has been mixed. - Stir in a tablespoon of vegetable oil. - Cover with clingfilm and put in fridge for 30 minutes to 1 hour. - Put some oil on some kitchen roll and wipe a pan. - Heat pan on medium heat. - Ladel pancake mixture onto pan and spread mixture evenly by turning pan. - Use fork to touch under pancake around the edges to test if cooked and unstick pancake. - Shake pan around to unstick pan. - Put a coin in your hand - there is a myth that when you put a coin in your hand and flip a pancake you will be rich for the next year. Hope it works! - Flip the pancake. - If you're having fried eggs, do this. - I enjoyed my pancake with ham, fried egg and grated cheddar cheese.
