This dish is yummy - it satisfies my hunger for pasta and has the added healthiness of having vegetables. You will need fresh tagliatelle, vegetables - I get a bag of ready chopped broccoli, carrots and cauliflower for ease of use. You will also need tomato and mascarpone sauce.

- Put some water in a pan to boil. - Whilst the water is heating, heat some olive oil in a frying pan on a medium heat. - Fry the veg. I like mine aldente but if you like yours well cooked perhaps boil them first. If it looks like they might burn either turn down the heat or add more olive oil.

- When the water is boiling add the pasta for the required time. - At the same time - when your veg are cooked to your desire, lower the heat and add the tomato and mascarpone sauce. Stir.

- Drain pasta when cooked. Put on plate. Add a splash of olive oil (to keep it unsticky). - Add veg and sauce on top of pasta. - Add salt and pepper as desired. - Enjoy!
