Pesto chicken and rice from pauline

- Preheat your oven to 190 degrees celcius - Slice your chicken (make sure to wash your hands thoroughly before and after). Slicing the chicken shortens the cooking time but also increases the surface area and so increases the flavours absorbed. - Prepare some aluminium foil with the sides up in a baking tray - Put the sliced chicken on the aluminium foil - Empty the jar of pesto onto the chicken and use a spoon to ensure every piece of chicken is smothered

- Put this in the oven for 30 minutes - In the meantime steam your rice and wash and cut your mushrooms into quarters - Open the aluminium foil carefully and add the mushrooms. Stir.
